I made Turkey Burgers with Sun-Dried Tomatoes and Feta Cheese on Friday for dinner (leftovers last night) from here (http://skinnyms.com/turkey-burger-with-sun-dried-tomatoes-and-feta-cheese/). They were decent, but the cheese melted because C and I wanted to make sure that the turkey was actually cooked all the way through. Cooking them on the George Forman grill was definitely a better idea than cooking them on the cast iron skillet (were not as charbroiled and you could actually still taste the sun dried tomatoes). Would I make them again? Maybe. Probably when we have a house and an actual grill (neither of us own a grill right now so when we want to grill something, it is the cast iron skillet or the George).
Speaking of the George – it has proven to be a very effective panini press. And much more economical than going out and buying one.
I also made tomato soup yesterday for my lunches for the week. I am trying to make one big thing over the weekend and eat it throughout the week. More economical than sandwiches or a salad and I can usually jam pack more things into there. The neat thing about this tomato soup is that it has canellini beans in it to give it some heartiness and also to act as a thickener. Will post about it once I actually try it tomorrow.
I also keep meaning to review a book I just finished called Remarkable Creatures by Tracey Chevalier (same author as Girl with a Pearl Earring). Will do so at some point.
