Homemade chicken tikka masala FTW

I love Indian food, specifically chicken tikka masala which I know ISN’T actually authentic Indian, but Brit-Indi.  C and I live near a great Brit-Indi restaurant that makes fantastic chicken tikka masala, but of course, eating out is expensive and we really try not to do it so often.  Last weekend we went to Cape Cod and had lunch AND dinner out on Saturday, plus we went to Plimoth Plantation and the Mayfower II, so it was an expensive weekend.  And next weekend we have Oktoberfest.  Always a good time.  So we’re playing it low key this weekend.

This recipe is great.  Not 100% authentic chicken tikka masala, but hey, what can you do.  I don’t have a tandoor, and probably never will (can you put tandoors on a wedding registry?)  It’s got good flavor and for the weather we were having last night (cold and rainy), it hit the spot.  The fact that it was propotioned for two people was also great so we were not left with a bunch of leftovers (we were however left with a bunch of leftover rice, even though I made enough rice for two servings.  Stir fry for dinner tonight!).

It says quick and it should be ready in thirty minutes – that was probably right, maybe a little longer.  I started cooking around 6:15/6:20 and it was done around 6:50 or so.  So, if you want good Brit-Indi food in a hurry, and you don’t want to wait a long time for it, this is your answer.
